WHAT I ATE TODAY (FALL RECIPES)



Today I am showing you some of my go-to recipes in the fall when the weather starts to get a bit chillier! Find all the recipes below and on my website

RECIPES:

Sweet Potato Fries:
1 medium sweet potato
1-2 tbsp oil
salt and pepper to taste
1/2 tsp paprika
Bake at 425 F for 30 minutes, flipping after 15.

Pasta:
1/3 cup pumpkin puree (usually comes in a can)
1 1/2 cups tomato sauce
1/2 cup almond milk (or other non dairy milk)
1/4 tsp each of garlic and onion powder
1 tsp each parsley and basil
1 tsp sugar
salt and pepper
1/2 cup vegan ground beef
1 cup chopped kale
200 g dry pasta

Pumpkin Cookies:
1/4 cup vegan butter (I use vegan Becel)
1/4 cup pumpkin puree
1 cup brown sugar
1 tbsp almond milk
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/3 cup dairy-free chocolate chips

Bake at 350 F for 11-13 minutes.
