Mango Lime RECIPE:
1 cup tofu cubes + 1/4 cup corn starch
1/4 cup orange juice
2 tbsp lime juice
1 tbsp soy sauce
2-3 tbsp maple syrup or brown sugar
1 tsp sriracha
1/2 mango, cubed
1 tbsp neutral oil

Coat all the tofu cubes in cornstarch. make sure each side is coated. Fry them in a pan with a bit of oil until they become crispy. Mix together orange juice, soy sauce, lime juice, maple syrup and sriracha and stir until combined. Add this slowly to the pan, a few tbsp at a time. The corn starch on the tofu should thicken the sauce if you add it slow enough. Add the mango chunks at the very end and stir gently to combine the flavours. Serve over rice, noodles, or even salad. Enjoy!
