Maple Curry Pasta:

Bbq Pulled Carrots (what I used on my sandwich):

Spinach slaw:
handful of spinach, shredded a bit
1 carrot shredded
1/3 cucumber, shredded or thinly sliced
1 tbsp tahini
1 tbsp maple syrup
1/2 tsp dijon mustard
water to make it thinner

Mix all sauce ingredients until combined. Toss the mixed veggies in the sauce. Enjoy!
