HOW TO MAKE THE PASTA:
1/2 box rotini noodles (or the shape of your choice)
1-2 cups tomato sauce
1 tsp each of basil, oregano and parsley
chopped veggies (bell pepper, tofu, zucchini, spinach, mushrooms, tomatoes)
1/2 cup almond milk
shredded vegan cheese
vegan parmesan cheese

Method: cook the noodles. Cook the veggies (minus the spinach) and spices in a frying pan with some water until they are softened. Add the tomato sauce and ooh for a few minutes. Add the almond milk and stir until combined. Add the pasta and cook on medium/low until the sauce thickens. At the end, add the spinach and vegan cheese. Top with vegan parm or nutritional yeast. Enjoy!
