RECIPES:
Oats:
3/4 – 1 cup quick oats
1 tbsp chia seeds
1 tbsp coconut sugar
2 handfuls fresh blueberries

Stir Fry:
Enough fresh veggies for the week, chopped (5-6 cups)
chopped onion & fresh ginger
2 tbsp sesame seeds
1/4 cup soy sauce
1 tsp sesame oil

+ Soba noodles

Stew:
2 cups chopped onion/celery
1 medium butternut squash, peeled and chopped
2-3 cups chopped mixed veggies (such as mushrooms, zucchini, eggplant)
3 cups veggie stock
1/2 cup red lentils
1 can chickpeas (15 oz.)
1 can tomato sauce (15 oz.)
fresh thyme
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp black pepper
salt to taste

+ Brown rice
