Here are some vegan recipes that are perfect for meal prep! You can make big batches of each and have it throughout the week or freeze for later on! At the end I also discuss the way my channel will be changing in the next couple weeks so stay tuned for that!

SPICED CARROT MUFFINS (makes 12 muffins) :
2 cups flour
2 tsp baking powder
3/4 cup coconut sugar
1/2 tsp ground ginger
1 tsp ground cinnamon
1/4 cup coconut oil
1/4 cup mashed banana (one small banana)
2 tbsp ground flax seed + 6 tbsp water (mix and let sit for 5 minutes)
1 1/4 cups non dairy milk
1 1/2 cups grated carrot (approx 2 medium carrots)

Bake in 375 F / 190 C oven for 18 minutes or until top is slightly firm to touch.

BBQ CHICKPEAS (makes enough for 4-5 wraps) :
14 oz can (or 2 cans for double batch) chickpeas
1 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp pepper
1 cup BBQ sauce of choice

CREAMY COCONUT CURRY (makes 5 servings) :
2 cloves garlic, chopped
2 cups veggies
1 tsp EACH of cumin, paprika, curry powder and ginger
2 cups tomato sauce
14 oz can coconut milk
2 tbsp tahini
2 tbsp sugar
