I don’t love pumpkin flavour, but when it is subtle and mixed with traditional pumpkin spices I can’t resist it. These cookies are chewy, crispy, sweet, spicy and perfect for this time of year. Enjoy!


INGREDIENTS (Makes ~10 cookies)
1/4 cup softened vegan butter (I used earth balance from the tub)
2 tbsp pumpkin puree (I’m sure sweet potato would work too if you don’t have pumpkin!)
3 tbsp cane sugar
3 tbsp coconut sugar or brown sugar
splash of vanilla
3/4 cup flour
1/2 tsp cinnamon
1/2 tsp mixed pumpkin/apple pie spices
1/2 tsp baking powder
1/4 tsp baking soda

Mix together the butter and pumpkin. Then cream that mixture together with the sugars. Ina separate bowl whisk the flour, spices, baking soda and baking powder. Add it to the wet mixture 1/2 at a time. Once you mixed it all into a perfect dough, pop it in the freezer for 10 minutes. Preheat the oven to 350F and have a dance party while you wait. Bake the cookies on a parchment-lined baking tray for approximately 12 minutes. You might need a minute or two more/less depending on a variety of factors. Use your cookie judgement. When they are done, sprinkle a bit of sugar on top so they look super fancy and enjoy! Eat them warm. They are so good.
