Maple Curry Pasta + Sister Tag! Recipe below:

Thanks for watching! I hope you make and love this maple curry pasta. It is one of my favourite meals to because it tastes incredible and it is super simple to make! This is a great option to bring to school or work with you because it is easy to make in a big batch (so you can have leftovers), is quite portable and will keep you fuelled throughout the day.

Full Recipe:

4 tbsp almond butter
1 cup almond milk
2 tbsp tomato sauce
1 tbsp soy sauce
1-2 tbsp curry powder
1/2 tsp ginger (fresh or powdered works)
4 tbsp (or more) maple syrup

1/2 bag (about 250 grams) brown rice pasta
2 cups chopped kale
1/2 red pepper, sliced
1/2 cup tofu, cubed

Cook your pasta according to the package. Drain it and set it aside. To make the pasta sauce combine almond butter, almond milk, tomato sauce, soy sauce, curry powder, ginger and maple syrup by whisking it in a pot. Heat on low while you make the veggies. Sauté the red peppers and tofu in a bit of water until they are softened. Add the kale and put the lid on the pan so it can steam for a few minutes. Then, add the pasta and the sauce and stir until everything is combined. You can leave it on the heat for a few minutes so it will thicken. Serve and enjoy!
