Today we are making some comfort food favourites that I turned vegan and healthy! We’re making avocado fries, berries and cream pancakes and pop tarts!

PANCAKES (makes 6-8) :
2 cups spelt flour
1 1/2 cups non-dairy milk
2 tbsp baking powder
3 tbsp sweetener of choice (I used maple syrup)
1/3 cup mashed banana or applesauce
1/4 cup oil (I used coconut oil)
fruit for topping
coconut whipped cream // recipe: goo.gl/wxrPbX

AVOCADO FRIES:
1 avocado
flour (as much as you need)
almond milk (as much as you need)
a mix of bread crumbs, nutritional yeast and a pinch of pepper

POPTARTS:
1 cup white flour
1 cup whole wheat or spelt flour
2 tbsp sugar
1/2 cup solid coconut oil (NOT LIQUID) or vegan butter
1/4 cup cold water
jam
icing (mix powdered sugar and water)
