Today we are making some super simple decadent chocolate cupcakes with cookie dough frosting, and the best part is, it’s all vegan! Recipe and directions below 🙂

CUPCAKES:
1 cup + 2 tbsp flour
2 tbsp cocoa powder
3/4 cup sugar
1 tsp baking soda
2/3 cup almond milk
1/3 cup melted coconut oil, vegan yogurt or applesauce
1 tbsp apple cider vinegar
2 tsp vanilla

Bake at 350 F/ 175 C for 22-25 minutes or until you can stick a toothpick in the middle of one and pull it out clean (not covered in batter.)

FROSTING:
2 tbsp vegan butter
4 tbsp brown sugar
1 tbsp almond milk
1/2 tsp vanilla
1/4 cup flour
1/3 to 2/3 cups powdered sugar (keep adding until you reach your desired consistency)
dairy free chocolate chips (I use Enjoy Life mini chocolate chips)
