Today we are making a super creamy dairy-free pasta with garlic tomatoes! This recipe is vegan and can easily be made gluten free by using a gluten free pasta. Recipe below!

RECIPE:
I used bowtie (farfalle) pasta. To make this gluten free you could use rice or quinoa pasta
2 cloves garlic
1 cup cherry tomatoes
salt & pepper to taste
1 batch creamy sauce (see below)

CREAMY SAUCE:
3/4 cup cashews (soaked if not using high speed blender)
3/4 cup non-dairy milk (or more if needed)
1/4 cup pasta water
1/2 tsp paprika
1 tsp parsley
1 tbsp nutritional yeast
salt and pepper to taste
