Today we are making my favourite crispy potato wedges! These are one of my favourite comfort food recipes. I love eating these on their own or along side a hearty vegan burger. If you like crispier fries you can cut these thinner into more “french-fry” type of shapes. Recipe below!

2-3 medium potatoes
2 tbsp oil
1 tbsp corn meal
1 tbsp breadcrumbs (gluten free breadcrumbs work too)
1 tbsp flour of choice (gluten free flour works too)
1/2 tbsp paprika
1 tbsp dried herbs like parsley or basil
salt and pepper to taste

Bake at 425 F / 220 C on a parchment-lined baking tray for 45 minutes, flipping after 25.
