A delicious Potato Skin recipe with garlic mashed potatoes loaded inside of each potato skin topped with a low fat shredded cheese blend, turkey bacon and non-fat Greek yogurt!

Recipe:
3 Large Russet Potatoes
1/3 Cup low fat cheddar cheese
3 Tbsp (1.5oz) Fat free cream cheese
3 Slices Turkey Bacon Low Sodium
3/4 Cup Skim Milk
2 Tbsp Light butter spread
1/2 Tsp Garlic Powder
1/2 Tsp Black pepper
3 Tbsp Fat free sour cream
1 Cup Shredded lettuce
1/4 Cup Chives

Step 1: Microwave Potatoes for 10-12 minutes. (1100 Watt)
Step 2: Cut Potatoes
Step 3: Scoop out Potatoes with spoon
Step 4: Make mashed Potatoes
Step 5: Spray down and bake Potato skins (475F @ 10 minutes)
Step 6: Cook turkey bacon
Step 7: Fill the Potato skins
Step 8: Bake again (475 @ 8 minutes)
Step 9: Garnish the plate & serve
