Coconut Tahini Sauce:
2 tbsp tahini or sub another nut butter
3/4 cup coconut milk
1 tsp sriracha or hot sauce
1 tbsp sugar or liquid sweetener
1 tbsp soy sauce or tamari
lime juice to taste

2 cup red peppers and mushrooms
1 tsp each dried herbs like parsley, basil
1 (14 ounce) can tomato sauce
14 ounces water
2 cups penne pasta or pasta of similar size
1 tbsp vegan cream cheese
1 tbsp chopped fresh basil (optional)
handful of spinach or kale

Pulled BBQ carrots:
2-3 carrots grated or julienned
1/4-1/2 cup bbq sauce
shredded vegan cheese
bread + vegan butter
